ABOUT THE BOOK

Safe food is not a luxury—it is a basic human right and a foundation of public health. This timely book offers a holistic perspective on Food Quality, Safety and Nutrition, bridging science, policy and indigenous knowledge. Across nine chapters, it explores food legumes, storage, processing, germination and nutritional enhancement. It reveals how traditional practices such as germination and cooking can improve nutrient bioavailability while reducing pesticide residues. A key insight is the science of optimal germination for developing functional, legume-based fortified foods. The book highlights the urgent need to scientifically validate and modernise India’s traditional grain-storage systems. It also explores emerging solutions such as essential-oil nanoemulsions for safer, non-chemical pest management. With valuable insights into dietary approaches for lifestyle diseases and traditional foods such as multigrain flour, the book connects food science with everyday health. A compelling blend of research, indigenous wisdom and modern technology, this book is relevant to researchers, policymakers and practitioners alike and is a timely call for a healthier, safer and more food-secure India.
